Corn Casserole

I may have posted this in the past, I can't remember... oh well! I am going to do half this recipe, and just use small cans of corn b/c only my mom & like corn, and it seems silly to make a 15-serving dish for just 2 people!

Corn Casserole
15 servings/2 points each

1 (15 1/4 oz) can corn
1 can (14 3/4 oz) cream-style corn
1 (6 serving) box corn muffin mix
1/2 c. fat free margarine
1 c. fat free sour cream

1. Preheat oven to 350
2. Spray 13x9 pan w/cooking spray
3. Stir all ingredients until mixed
4. Spread into pan & bake for 35-40 minutes or until top is golden brown.

my mom makes something just like this. I will have to suggest some of the healthy substitutions to her.
