My uncle used to always make the best sweet potato casserole when we had Thanksgiving over there. It was full of brown sugar, butter, and had loads of marshmallows on top. I looked over a variety of WW friendly sweet potato recipes, and came up w/this as my version! I haven't tried it yet, so it may need some tweaking here and there.
Teale's Sweet Potatoes
8 servings/3 points
3 large cooked sweet potatoes, mashed
1/2 c. skim milk
1/2 c. Egg Beaters
1/2 c. Splenda brown sugar blend
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 c. mini marshmallows
1. Combine all ingredients except marshmallows.
2. Pour into a glass baking dish or pan sprayed w/cooking spray (I will probably use a square dish or round cake pan)
3. Bake at 350 degrees for 30 minutes.
4. Add marshmallows on top & bake for another 5 minutes.
